The Smith’s Holiday Berry Cobbler {Gluten and Dairy Free}

This Christmas was the best yet. It’s true that children make life so much richer! While the babe is only 7 months and does not yet understand the meaning of the holidays, or presents for that matter, we certainly do, and we were able to enjoy every minute with him, watching him observe the world–and put it all in his mouth!

The toughest part this year for my husband and me was making sure we got to spend good quality time with his family, my family, and then just the 3 of us. We think it’s important to establish our own little traditions together and get that quality time, especially when we don’t really hold him much when other family members are around! Lots of other people wanting to love on our son is a good problem to have.

We made it work perfectly this year, and for that I am thankful! This cobbler is one that always makes its way onto the Smith family table at ANY Smith Family brunch, which always happen on a holiday! Originally my father-in-law would make it. Once I joined the family, I took on the role of making it! It’s simple and so very yummy. It says family to me, and I hope it becomes a tradition for yours as well!

The Smith’s Holiday Berry Cobbler 

Ingredients

2 15oz bags frozen mixed berries

1/2 cup melted butter (I use Earth Balance vegan butter; you could try virgin coconut oil too!)

1 cup brown sugar

1 cup gluten free flour blend (I like the Trader Joe’s brand!)

1 cup gluten free rolled oats (I buy mine at Trader Joe’s)

Instructions

Preheat your oven to 350F. In a medium bowl, mix your oats, flour and sugar. Add in the melted butter and stir until dry mixture is moist and some lumps form. Pour your still frozen berries into a 2-3 quart baking dish and top with the oat mixture, spreading it evenly over the top.

Bake for 40 minutes, or until juices are bubbling around the sides and the top is golden. If you double the recipe, which I sometimes do if I want lots of leftovers, you’ll want to cook it twice as long!
